Another thing that has really changed since we started really focusing on our health is all the natural, home cookin we’ve been doing. Previously when I would try to eat healthy it would involve a lot of Lean Cuisine meals and 100 calorie packs. Essentially sodium loaded cardboard and 800 calories of Reese’s by the time I stopped myself. In fact, just a few months ago, I bought a 4 pack of these at Costco and ate all 4 packs in two days. Hand to God, true story. Isn’t that disgusting!?
Anyway, our constant research of finding new and yummy recipes is really paying off. I know that a lot of people don’t have time, energy or desire to do that and the quick prepackages meals are what work for them. And I totally understand that! It’s better than Taco Johns every day!
What’s working for us is finding recipes that are delicious and desirable. Tomorrow is our cheat day, but I’m already excited for our healthy french toast! Tonight we talked about just ordering a pizza…….just giving up and doing it. But, instead, we went downstairs and Shredded and hubs decided he would make black bean burgers and they were awesome! (I am getting SOOO sick of black beans! We have about 60 cans left over from our wedding (since we made all our own food), so we have to use them up. However, the black bean burgers tonight were perfect!).
Eating like this is beneficial to me for a few reasons. Not only is it better for my body, better for my diabetes and better for controlling my weight, it’s better for my emotional state. I know that sounds weird, but I feel better about myself and happier when I’m eating like this. Which seems sort of contradictory because all I want to do is break out some cookie dough and go to town (remember those days, Amber!?), but it feels good to finally have control and do what’s right for my body.
Speaking of natural, home cookin, you may remember me talking about my friend Lindsay who kindly gives us meat (You ROCK Linds!). Well, last weekend, Neil made buffalo jerky. And it’s awesome, for the most part. I’ll share the recipe and then tell you the part about it that wasn’t so awesome…
